    I’d go with Tobias as a name in case Tobi becomes too childish.

    Nice! I think Toby is the more logical spelling, but Tobi works too. Then you'll often have to correct it. Although that doesn't have to be a problem.

    I’d also officially go with Tobias. There might come a moment in his life when Tobi feels too childish for him.

    I'd definitely go with Tobias officially. Toby/Tobi sounds cute for a little kid, but not for an adult man.
