Wow, what a story and what pressure on your shoulders. You naturally don't want to disappoint anyone, not your mom and not your child. It sounds like you've lost track of everything, and if you're not careful, you might end up with a burnout, judging by your story.

I don't know much about running a business, but it might help to get an overview of everything by writing down what needs to be done. For example, make a to-do list and split it into care for your child, household chores, and your business. Then see what you can delegate entirely or partially to employees or outsource to, say, an accountant, housekeeper, childcare/babysitter/grandma. Schedule times for rest and family time. And take care of yourself—you can only take good care of others if you take good care of yourself first.

    I do sometimes feel like I’m on the verge of a burnout. My mother handles the overall accounting, and the rest is done by an accountant.
    Everyone keeps saying how impressive they find it that I’m doing all this, and I just nod and say yes, and it all works out, while at the same time I think, if only you knew. It doesn’t work out at all, and I dread the new season. Somewhere inside, I keep hoping that suddenly a golden solution will appear, but maybe that’s a bit naive. I feel like I need to do something about it myself, but it’s not that simple. Right now, this is my home, work, and pension fund. If I were to stop, I’d have to find a new place to live, try to combine work with my daughter, and hope that something’s left for my old age, although that’s one of my last worries at the moment.
    My partner will soon find out whether he gets a permanent contract, and if so, I hope we can buy a house in the future and I can leave this place.

    Can you give a bit more info about the place? Do you have staff? Is business going well? Could you maybe adjust the opening hours?
    What kind of place is it? "Hospitality" is quite a broad term.
    Could you potentially generate income in another way? For example, by selling or displaying products from local artists or something similar.
